Beer poking, Bierstacheln, is a 400-year-old tradition where a hot metal rod is plunged into beer to warm it and enhance its flavor by caramelizing the sugars. We’ve applied this same practice by German blacksmiths to make cold ciders more enjoyable during the winter months.
